Summary: Fish and fish products are commercially important in the food industry. The market value of these highly perishable foods is determined by their freshness level. Thus, the demand for a rapid and accurate freshness monitoring and evaluation method is becoming increasingly urgent. E-nose provides an economical way to evaluate the freshness level by "sniffing" the off-flavor emitted during the fish spoilage process. In this project, a learning-based method will be proposed and applied to fuse the responses of the gas sensor array and provide stable features. The desired impacts of this project are as follows: 1. Realizing a user-friendly fish freshness monitoring method 2. Providing an accurate and reliable freshness evaluation method 3. Improving the working efficiency of the inspector from the fish market
