Summary: The proposed project will develop, validate, and provide a rapid, portable, and data-driven solution for egg differentiation and traceability throughout the supply chain. We will achieve this by combining elemental signatures of eggs determined using x-ray fluorescence (XRF) with our expertise in provenance determination using artificial intelligence (AI). The end goal will be a tool that can be used to accurately differentiate free range from cage eggs at any point in the supply chain, and potentially also differentiate eggs from different producers. Results are obtained instantly and for zero processing costs.
